There is a 40-minute wait at Toit most nights and the staff hand you a buzzer without apologising for it, which tells you everything about how confident this place is. Three floors of exposed brick and old wood, brewing tanks visible from the stairs, and a noise level that makes the table the only conversation you can have. It's the most self-assured room in Indiranagar and it charges accordingly.

4.0Deep red, curry-leaf-flecked, and served in a small iron pan that keeps the last few pieces hot to the end. The coating shatters properly and the chicken underneath is still juicy — the fry temperature was clearly right. Yoghurt and green chilli cut through the heat, and the lime on the side is not decorative. My only real complaint is arithmetic: eleven pieces for ₹520, gone between two people in about four minutes.
